I’ve been making this slow cooker chicken divan casserole on those days when I want something warm, creamy, and easy without spending all evening in the kitchen. It's been our family favorite for decades, and even the kids love it!

Our family Crock Pot chicken divan is rich, comforting, and packed with tender chicken, broccoli, and a creamy curry sauce with just a hint of that classic flavor.

If this is your first time making chicken divan, don't be put off by the curry powder! The dish doesn't taste like curry but it adds just enough that this secret ingredient can't be skipped.

Ingredients Overview

  • Chicken breasts: Boneless and skinless work best, or use chicken thighs for a juicier option
  • Cream of chicken soup: Classic base, or substitute with cream of mushroom or cream of celery
  • Mayonnaise: Full-fat gives the richest texture, but light mayo can be used
  • Lemon juice: Fresh lemon juice is best
  • Curry powder: Use a mild blend or adjust to taste if you prefer less flavor, I used McCormick's brand.
  • Broccoli florets: Fresh broccoli works best, or use frozen but thaw first
  • Salt and pepper: Adjust based on taste and the soup used
  • Cheddar cheese: Sharp cheddar melts well, or try Colby Jack or mild cheddar
  • Parsley (optional): Fresh or dried for garnish
  • Bread crumbs or Crushed crackers like Ritz (optional): Add to the top at the end for a crunchy topping. - I often skip this!

Step 2: In a medium bowl, stir together the cream of chicken soup, mayonnaise, lemon juice, curry powder, salt, and pepper until smooth.

Step 3: Pour the sauce mixture evenly over the chicken. Cover and cook on High for 2 or more hours or Low for 4 or more hours, until the chicken is tender.

Step 4: Shred the chicken directly in the slow cooker using two forks, then stir in the broccoli florets.

Step 5: Sprinkle the shredded cheese over the top, cover again, and cook on High for about 30 minutes until the broccoli is tender and the cheese is melted.

Step 6: if you're adding a sprinkle of bread crumbs or crushed crackers, transfer the casserole to a casserole dish, sprinkle them on top, then broil for 1-2 minutes until golden brown. This is totally optional!
