This Chicken Bacon Ranch Potato Soup is made in the crock pot with frozen hash browns, cream cheese, cheddar, ranch seasoning, and crispy bacon. It is rich, cozy, and perfect for easy family dinners.

Ingredients
  

  • 32 ounce bag frozen diced hash brown potatoes
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1 packet dry ranch seasoning mix
  • 4 cups chicken broth
  • 1 can cream of chicken soup
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • 8 slices bacon, cooked and crumbled (divided)
  • 1 block cream cheese, cut into cubes and softened
  • 1 ½ cups shredded sharp cheddar cheese, divided
  • ½ cup sour cream
  • Chopped green onions, for garnish

Method
 

  1. Add frozen hash browns, onion, garlic, half the bacon, and ranch seasoning to the slow cooker.
  2. Stir in chicken broth, cream of chicken soup, and seasonings until combined.
  3. Cook on Low for 6 hours or High for 3 hours until potatoes are tender.
  4. Stir in cream cheese, sour cream, and 1 cup of cheddar cheese until smooth.
  5. Serve topped with remaining cheese, bacon, and green onions.

Notes

  • Use full-fat cream cheese for the creamiest texture
  • Mash potatoes to thicken if desired
  • Extra bacon adds great crunch
  • Serve with rolls or crusty bread
  • Reheats well for leftovers
