Method
- Cook the pasta according to package directions. Drain and rinse under cool water, then let it finish cooling.
- Combine the pasta, tomatoes, cucumber, red onion, olives, and feta cheese in a large bowl.
- Whisk together the olive oil, red wine vinegar, salt, and pepper until smooth.
- Pour the dressing over the salad and toss gently until evenly coated. Chill before serving.
Notes
- Chill for at least 30 minutes before serving
- Add extra olive oil if the salad seems dry after refrigeration
- Store in the refrigerator up to 4 days
