Classic Greek Pasta Salad

This easy Greek pasta salad combines tender pasta, fresh vegetables, feta cheese, olives, and a simple homemade dressing. It's the perfect summer side dish for potlucks, BBQs, and family meals.

Ingredients
  

  • 10 ounces short pasta (rotini or penne)
  • 1 cup cherry tomatoes, halved
  • 1 large cucumber, diced
  • ½ small red onion, thinly sliced
  • ½ cup kalamata olives
  • ¾ cup feta cheese, crumbled
  • cup olive oil
  • 2 tablespoons red wine vinegar
  • Salt and black pepper, to taste

Method
 

  1. Cook the pasta according to package directions. Drain and rinse under cool water, then let it finish cooling.
  2. Combine the pasta, tomatoes, cucumber, red onion, olives, and feta cheese in a large bowl.
  3. Whisk together the olive oil, red wine vinegar, salt, and pepper until smooth.
  4. Pour the dressing over the salad and toss gently until evenly coated. Chill before serving.

Notes

  • Chill for at least 30 minutes before serving
  • Add extra olive oil if the salad seems dry after refrigeration
  • Store in the refrigerator up to 4 days
