Easy Broccoli Cheddar Pasta Salad

This easy broccoli cheddar pasta salad is creamy, simple, and full of classic flavor. Made with bacon, cheddar, and fresh broccoli, it’s the perfect side dish for potlucks, barbecues, or family dinners.

Ingredients
  

  • 12 ounces bow tie pasta, cooked and cooled
  • 3 cups small broccoli florets
  • 2 cups shredded sharp cheddar
  • 8 slices bacon, cooked and crumbled
  • ½ cup red onion, finely diced
  • ¾ cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons sugar
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Method
 

  1. Cook pasta according to package directions. Drain, rinse with cold water, and cool completely.
  2. In a large bowl, combine pasta, broccoli, cheddar, bacon, and onion.
  3. In a separate bowl, whisk mayonnaise, vinegar, sugar, salt, and pepper until smooth.
  4. Toss dressing with pasta mixture until coated. Chill at least 1 hour before serving.

Notes

  • Chill at least 1 hour for best flavor and texture
  • Cut broccoli into small pieces for easy bites
  • Stir before serving if dressing settles
  • Add a splash of milk or mayo if it thickens too much
  • Store covered in the fridge up to 4 days
