Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 cup diced onion
  • 1 cup chopped cremini mushrooms
  • 32 oz fresh green beans trimmed (haricots verts if available)
  • ¼ cup butter
  • 3 garlic cloves minced
  • 4 oz cream cheese softened and cubed
  • ¾ cup heavy whipping cream
  • ½ cup chicken broth
  • ½ teaspoon Worcestershire sauce
  • ¾ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ¾ cup shredded cheddar cheese
  • French fried onions store-bought, like French's

Equipment

  • 1 large skillet
  • 1 medium saucepan
  • 1 9x9 baking dish

Method

  1. Preheat the oven to 350°F.
  2. Heat the olive oil in a large skillet over medium heat. Sauté the onion and mushrooms until soft but not browned. Add the green beans and cook just until they begin to soften.
  3. Meanwhile, melt the butter in a medium saucepan over medium-low heat. Add the garlic and cook for 1 minute.
  4. Stir in the cream cheese, heavy cream, chicken broth, Worcestershire, salt and pepper. Simmer, stirring, until smooth and thick enough to coat the back of a spoon.
  5. Pour the sauce over the green beans and stir to coat. Spread in a 9x9 baking dish and sprinkle with the cheddar.
  6. Bake for 30 minutes, adding the fried onions for the last 5 minutes.

Notes

  • Let the cream cheese soften before you start so the sauce melts smoothly.
  • Cook the green beans just until they begin to soften. They finish in the oven.
  • Add the fried onions near the end of baking so they stay crispy.
  • To make ahead, assemble without the onions, cover and refrigerate up to 1 day. Add a few extra minutes of baking time.
  • For a crowd, double the recipe and use a 9x13 dish.
