Ingredients
  

  • 2 pounds ground beef
  • 16 ounce cottage cheese
  • 1 cup chunky salsa
  • 2-3 tablespoon taco seasoning
  • 1 ¾ cup shredded cheddar cheese

Method
 

  1. In a large skillet over medium heat, cook 2 pounds of ground beef until browned. Drain off the grease and set aside.
  2. In a large bowl, stir together the drained cottage cheese, chunky salsa, taco seasoning, and ¾ cup of the shredded cheese. Add the cooked ground beef and stir until everything is well combined.
  3. Transfer the mixture to a shallow baking dish or cast iron skillet. Smooth the top and sprinkle on the remaining ¾ cup of cheese.
  4. Bake at 375°F for about 20 minutes, or until the cheese is melted and bubbly. Serve hot with your favorite toppings like sour cream, avocado, or green onions.
