Ingredients

Peach Filling
  • 6 cups fresh peaches, sliced
  • ½ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 2 teaspoons cornstarch
Cobbler Topping
  • 1 cup all-purpose flour
  • ¾ cup granulated sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, melted
  • ¾ cup whole milk

Method

  1. Heat the oven to 350°F and lightly grease a baking dish or cast iron skillet.
  2. Add the sliced peaches to a large bowl with sugar, lemon juice, vanilla, cinnamon, and cornstarch. Stir until the peaches are evenly coated, then transfer to the prepared dish.
  3. In a separate bowl, combine the flour, sugar, baking powder, and salt. Mix in the melted butter and milk until a smooth batter forms.
  4. Spread the batter over the peaches and bake for 40 to 45 minutes, until the topping is golden and the peach filling is bubbling. Let cool slightly before serving.

Notes

  • Fresh ripe peaches will give the best flavor and sweetness
  • Allow the cobbler to rest for 10 to 15 minutes before serving so the filling can thicken
  • Frozen peaches can be substituted if thawed and drained well first
  • Sprinkle coarse sugar on top before baking for extra texture and crunch
  • Store leftovers covered in the refrigerator for up to 4 days
