Grandma's Easy Banana Cookies (With Pudding Mix)

Ingredients
  

  • 1 package of banana pudding jello mix
  • 1 ripe banana, mashed
  • 1 cup brown sugar
  • 1 teaspoon baking soda
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ cup white chocolate chips
  • 2 cups flour
  • ½ cup butter, softened

Method
 

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper. Cream together the butter and brown sugar until fluffy.
  2. Add the mashed banana, eggs, and vanilla extract and mix until smooth.
  3. Stir together the flour, banana pudding mix, and baking soda. Gradually add to the wet ingredients, then fold in the white chocolate chips.
  4. Roll the dough into balls and place on the prepared baking sheet. Bake for 10 to 12 minutes until lightly golden around the edges.

Notes

  • Use very ripe bananas for the best flavor.
  • White chocolate chips can be replaced with milk chocolate chips.
  • Store cookies in an airtight container for up to 4 days.
  • Freeze baked cookies for up to 2 months.
