Grandma's Easy Cornbread (in a Skillet)

This old fashioned skillet cornbread is soft in the center with crisp buttery edges. Made with milk and baked in a cast iron skillet, it’s an easy homemade side dish for any meal.

Ingredients
  

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • ¼ cup sugar
  • 1 tablespoon baking powder
  • 1 cup milk or buttermilk
  • 1 large egg
  • ¼ cup butter, melted
  • Extra butter for greasing skillet

Method
 

  1. Preheat oven to 400°F and place a buttered cast iron skillet in the oven to heat.
  2. In a bowl, whisk together cornmeal, flour, sugar, and baking powder.
  3. In another bowl, whisk milk, egg, and melted butter. Stir wet ingredients into dry ingredients until just combined.
  4. Pour batter into the hot skillet and bake for 20 to 22 minutes until golden brown and cooked through.

Notes

  • Preheating the skillet helps create crispy edges
  • Do not overmix the batter
  • Reduce sugar for a more savory cornbread
  • Reheat slices in the oven for best texture
