Ingredients
  

  • 2 cups crisp cookies of your choice coconut cookies will give sweet flavor but honey graham crackers will work fine too
  • ½ cup butter
  • 1 cup powdered sugar
  • 3 8oz packages Philadelphia cream cheese
  • 1 cup heavy whipping cream
  • 1 ½ cups strawberries
  • 3 ounces Strawberry Gelatin

Method
 

  1. Crush the cookies in a bag with a rolling pin until fine. Mix with melted butter and press into an 8-inch springform pan. Chill for 20 minutes.
  2. Beat together cream cheese, powdered sugar, and heavy whipping cream until smooth and creamy.
  3. Prepare the strawberry gelatin according to the package directions. Let it cool, then stir into the cream cheese mixture until blended.
  4. Spread the cheesecake filling evenly over the chilled crust. Top with fresh strawberries, then refrigerate at least 4 hours until set. Slice and serve chilled.
