This old fashioned carrot raisin salad is creamy, sweet, and full of fresh crunch. Made with shredded carrots, apples, raisins, and a simple mayonnaise dressing, it’s a classic grandma-style side dish.

Ingredients
  

  • 1 pound carrots, peeled and shredded
  • 1 medium apple, peeled and shredded (core removed)
  • ½ cup raisins
  • ½ cup mayonnaise
  • 2 tablespoons granulated sugar
  • 1 teaspoon lemon juice
  • ¼ teaspoon salt

Method
 

  1. Shred the carrots using a box grater or food processor and place them in a large mixing bowl.
  2. Peel, core, and shred the apple, then add it to the bowl along with the raisins.
  3. In a separate small bowl, whisk together the mayonnaise, sugar, lemon juice, and salt until smooth.
  4. Pour the dressing over the carrot mixture and stir until everything is evenly coated. Cover and chill for at least 1 hour before serving.

Notes

  • Use freshly shredded carrots for best texture
  • Chill before serving for best flavor
  • Adjust sugar depending on apple sweetness
