Ingredients
  

  • 1 pound fresh okra sliced into ½-inch rounds
  • 2 tablespoons sliced into ½-inch rounds
  • ½ small onion, finely diced
  • 2 garlic cloves, minced
  • ½ teaspoon red pepper flakes
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon lemon juice or apple cider vinegar

Method
 

  1. Heat the olive oil in a large skillet over medium-high heat. Add the diced onion and cook until softened, about 3 to 4 minutes.
  2. Stir in the minced garlic and red pepper flakes. Cook for about 30 seconds until fragrant.
  3. Add the sliced okra to the skillet in an even layer. Let it cook undisturbed for several minutes to help reduce moisture and develop some browning.
  4. Stir the okra and continue cooking until tender and lightly golden around the edges. Season with salt and pepper, then drizzle with lemon juice or vinegar before serving.

Notes

  • Cook okra in a single layer for best texture
  • Do not stir too early to help reduce sliminess
  • Frozen okra can be used if thawed and dried well
  • Store leftovers in the fridge up to 4 days
