  • 1 small onion, diced
  • 2 carrots, peeled and diced
  • 2 stalks celery, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon salt

  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 4 cups chicken broth

  • 1 tablespoon apple cider vinegar, optional

Method

  1. Cook bacon in a skillet until crisp. Reserve half for topping.
  2. Add split peas to the slow cooker and top with vegetables, cooked bacon, seasonings, and bay leaf.

  4. Remove bay leaf, stir, adjust seasoning, and serve topped with crispy bacon.

Notes

  • Stir once or twice during cooking to prevent settling
  • Add a splash of broth if the soup thickens too much
  • Leftovers keep well in the refrigerator for up to 4 days
