Pistachio Fluff Salad

A creamy pistachio fluff dessert made with crushed pineapple, mini marshmallows, and whipped topping. This retro Watergate salad is a holiday favorite that’s ready in minutes.

Ingredients
  

  • 3.4 oz pistachio Jell-O instant pudding mix
  • 20 oz can crushed pineapple including juice
  • 1 cup miniature marshmallows
  • ½ cup chopped nuts optional
  • 8 oz container Cool Whip thawed

Equipment

  • 1 large serving bowl

Method
 

  1. In a large bowl, combine the pistachio pudding mix, the crushed pineapple with the juice, the marshmallows, and the nuts if you're using them.
  2. Stir in the defrosted Cool Whip. Chill until ready to serve. Adding marischino cherries and crushed pistachio nuts is a nice touch on top before serving.

Notes

Mix-in ideas: shredded coconut or mandarin oranges
Lighter ingredients: You can use sugar-free pudding mix or a "healthier" brand of whipped topping, or even stabilized whipped cream.
