Slow Cooker Pork Chops

These old fashioned slow cooker pork chops are tender, sweet, and savory with a rich Dr Pepper glaze. An easy comfort food dinner made with simple ingredients.

Ingredients
  

  • 6 boneless pork chops, about 1 inch thick
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 small onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 cup Dr Pepper, not diet
  • ½ cup barbecue sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 tablespoon cornstarch
  • 1 tablespoon cold water
  • Chopped parsley, for garnish

Method
 

  1. Place pork chops in the slow cooker and season with salt and pepper. Top with onion and garlic.
  2. Whisk together Dr Pepper, barbecue sauce, brown sugar, Worcestershire sauce, vinegar, smoked paprika, and garlic powder.
  3. Pour sauce over pork chops and cook until tender.
  4. Stir in cornstarch slurry and cook until thickened.
  5. Garnish with parsley and serve warm.

Notes

  • Use regular Dr Pepper for the best glaze
  • Add a splash of broth if the sauce thickens too much
  • Boneless or bone in chops both work with adjusted cook time
  • Leftovers keep well in the refrigerator for up to 4 days
